Hand-knead dough until smooth and elastic.

A little water can be added if you feel the dough to be too dry. A sprinkle of flour can be added if the dough is sticky.

Wrap your pasta dough in plastic, and leave it at room temperatures for at least 30 minutes. Allow the gluten to relax to make the dough easier for rolling out.

Once the pasta dough has rested, you can roll it out.

If you are making ravioli or tortelli, spread the filling out on one pasta sheet. Seal the pasta by covering it with a new sheet and pressing around the filling. You can use either a ravioli cutter or knife to separate the pieces.
